GLUTEN WHAT? We're often asked by our customers what we mean when we say that we specialize in "Gluten-free" treats. So, we decided to respond to those questions through this blog. We hope to try and clean up some of the confusion concerning gluten and gluten-free products. So ... What IS Gluten? Gluten is, basically, a protein that is found in most grains, wheat, cereals and breads. It is actually made up of several different proteins. Okayy... So why is gluten in my baked goods? Well, gluten adds texture and chewiness to baked goods and can also be used as a binder, flavour enhancer and even as a protein supplement. It helps baked goods to rise and retain their shape (no one likes a crumbled cake). Fun fact: Gluten is actually Latin for glue. :) If that's the case, then why would I choose a gluten-free product? Persons who opt for a gluten-free product tend to fall into one or both of these two categories: they either have a gluten-intolerance and/or they're trying to lose weight. Gluten-Intolerance? Gluten-Intolerance really refers to three different diseases: wheat allergy, non-celiac gluten sensitivity and celiac disease. It essentially means that you are sensitive to gluten and it could result in complications like hives, digestive problems, bloating and even inflammation in the small intestine. In fact, celiac disease is on the rise and most people don't even know they have it. Additionally, gluten sensitivity is much more common and eating gluten-free could definitely help. And what about losing weight? A lot of modern diets (like Paleo) suggest cutting out gluten from the diet. These diets works because fresh foods like fruits, meats and vegetables don't contain gluten while most staple foods/carbs do. Actually, research shows that gluten is not the reason for you gaining weight. So, if you don't have an intolerance you can definitely have one of our regular products :P. However, it is important to note that ingesting gluten can result in bloating. Hmm, interesting. So what if I don't want to lose weight or have an intolerance? Can I still have gluten-free pastries? Definitely! Gluten-free desserts still have the yummy flavours of regular desserts. The only difference is in the way you store them. We often recommend that you keep gluten-free products in the fridge so that they don't dry out! Great! I think I want to try one!
